| I don't know pork production at all but ask many questions when I take cattle in for butchering. I love the small meat stores/butcher shops but lots of their products are coming in as boxed beef from a supplier. They buy what the can sell without the parts they can't. Lack of slaughter labor and cost to do it makes it more profitable for the storefront to use boxed beef. Would we be better of with small butcher shops doing their own products? Yes but if the consumer is complaining about prices now getting them to pay more won't be easy. | |
