Pittsburg, Kansas | My wife often makes a casserole as a side dish to our main meat meal. It consists of eggs, sour cream, cream cheese, garlic powder and then add any veggies or other stuff wanted like olives, bacon, onions, etc. Pretty easy and quick, tasty and works good as a keto or carnivore side dish depending on what additional ingredients are added.
We have variations of that several times a week as a side dish.
Wife gets lots of recipes off Pinterest. Some as is and some she adapts to our ketogenic way of eating.
She has also came up with a delicious bisquit recipe that she makes often that does not have conventional flour so it is also low carb. Made from almond flour, coconut flour, chicken meat flour, baking powder, salt, eggs, cream cheese, sour cream or heavy cream and cheese. She makes her own cheicken meat flour so it is not a simple recipe as making the meat flour is kind of involved. Don't have to use the meat flour (can just use almond and coconut) but we like the taste and texture of the meat flour plus we don't like to use all that much almond flour. Almonds are not especially easy to digest. We think a little is ok but eating gobs of it is not all that great for the digestive system. But I digress.
With a good meat dish, the casserole as a side dish and the bisquits we have good variety and enjoy our meals a lot. She will put some dill pickles and or olives on the table also to round out a variety of tastes yet still all be very low carb.
