| I was low on beef, had some kill slots for early September, but nothing ready or even on feed. 3 weeks before my slot date wife had to buy burger at the store and said oh no I’m not eating this you better come up with something.
So I caught the biggest steer off Klein grass pasture and put him on some Bermuda hay I strategically baled very young for this purpose. And fed him about 15# of corn a day for I think it was 17 days.
The guy weighed 940 at a scale half a mile down the road and dressed 58% without shrink.

I’m totally shocked he is good. I was worried about him behind gamey or super lean. I know it’s not fantastic or anything, but I’m pretty shocked this worked out fine.

Townsend, Montana | No klein grass in this part of the world, but in my limited experience, there is nothing that will make a beef fat and well marbled better than orchard grass.
It's almost as if cows were made to eat grass... |

| That’s it. I didn’t realize it was just down here in the south.
Cows love it. Heifers get too fat on it. It’s dang near like having wheat pasture in summer time. |

North Central Texas | 17 days... The Klein is good stuff and I'll say that looks gamey. The spring calves here at the house are going on a 60 day weaning tomorrow on Klein pasture. I'll take my prime fed 160 days later dry aged for a few weeks over that. Kind of spoiled here though... If the grill flares up and burns something, I get yelled at. |

| I have some that will be prime come February, I was just out of meat and had to kill something. I just had 17 days from when wife said I had to kill one and I had a locker date.
It’s actually really good. Steak is tender and favor is average, pretty much in line with something from a chain steakhouse. Burger a little leaner than I like, but not bad.
I just thought I was extremely lucky for such a young animal that hadn’t been on feed. |
