My friend and I used to fry catfish in a pan filled with corn oil.  Man they were good.  The meat almost fell off.  He's gone and I don't know what seasoning he bought to roll them in.

It wouldn't have been anything too exotic.  I'm thinking maybe just corn meal, salt and pepper I suspect.  The lay them in the pan filled with corn oil.

Does this sound about right?
