I trim the stem off, cut the beans to size and blanch them for 5 minutes. Then I remove them from the pot immediately into cold iced water to stop the cooking process. From there they go onto a towel and are dried, then put single layer on a baking sheet and placed in the freezer for an hour. After that I bag them. Drying them and freezing single layer prevents them from freezing in a lump in the bag.
