The water usage/day is staggering.

Yes it is, which is why they don't like to haul the manure to all the fields that went into it. On the other hand, an old hippie friend remarked the other day that he couldn't remember the last time he saw a cow walk through belly deep slop, which was common even thirty years ago. Lots more cows standing in manure part way up their hoof than on grass though. Talking about dairy.
