If you are trying to do low carb eating reducing the fat will not help. In fact the fat will help slow down the glucose absorption of other carbs. Fat is not an enemy unless eaten with a lot of other high carb foods or sugar. Once the insulin levels are raised in the body by the carbs the fat will also be stored as fat. Those of us on low carb and especially ketogenic diets try to keep the carbs low enough so we are in fat burning mode most of the time. So we run on fat more than carbs.

Wife and I use quite a bit of heavy whipping cream because it is high in fat yet fairly low in carb count. Along with cream cheese she uses the heavy cream in low carb sauces, gravies and even deserts.

But it a person adds the fat to an already high carb meal insulin will be high and the fat will get stored as fat instead of burned as energy. So there is context in fat usage.
