Before reading the following I can only say I have good friends who like to cook and BBQ so most of what's below I am the help not the chef.


In our area everything is done on an oak pit bbq. Probably would be considered grilling by you folks back east

So the number 1 thing we cook out here would be tri-tip. It used to be only in California but you can find the cut elsewhere now thanks to so many of us moving out.

Also baby back ribs are awesome and fairly easy.

Chicken quarters are great because they are relatively cheap and fairly forgiving.


Other sorts of food I've eaten at social gatherings.
Raviolis and or Lasagnas.
Pork tenderloin (for the brave at heart)
Top block
Stew and polenta
Fajitas
Brisket
Poached cod

And after all that I do actually love me some cheeseburgers. Bring the fryer and drop some tater tots in it.
