I've crossed Kansas a couple times in the last 20 years. Typically, I've always taken 36 while traveling west for the adventure, then 70 going home because it's time to put the hammer down and go home.
The east third of KS has a fair number of towns, but once you pass about Washington, KS, don't let your gas tank get below half! Also, bring something to eat with you. You can go several hours and not pass a single Subway or something you can grab fast and keep moving.
If you pace yourself and don't stop much, you can make it from Hannibal, MO to Denver in about 12 hours.
