I grow dual purpose Buff Orpingtons for egg layers and meat. You can see the difference in the meat, more yellow color, breast meat has fat throughout the breast. I have always liked breast meat the best so bake whole chickens and I eat the breast. I cook breast down, then turn and brown the breast. I marinate breast meat before cooking. I like using homemade Italian dressing/marinade. But, I like my chicken well browned and a little dry. I do not like the sloppy, soft, fat chickens of today....James
