And to answer your question on why the meat is stringy, it's several things. 1st its the feed that they use. Next its the growth rate of the bird. Then genetics play a part also.
I'm going to start raising for farmer focus In about a month or so. A few company representatives were over at my poultry houses this past Monday, looking at my new renovation and equipment install and I was asking the same questions you did, and that's what I was told.
I've never liked chicken my whole life for that reason (I'm 46) and as I was telling them I've ate more chicken the last 3-4 months then in my entire life. It's really good, wished I'd been buying it years ago.
