Does it work good in alfalfa in low humidity environments

I'd say the best for alfalfa being handled gently. You need to look at the rake action on each type of rake. For alfalfa a wheel rake would be my last choice, a bar rake comes in second.

FWIW, I have had all three types, still have the bar rake for certain circumstances (turning over rained on straw). A wheel rake when sit for crop driving wheels (not so much down pressure to be ground driven) is what is hard on alfalfa leaves. If more down pressure is used your ash content can increase too with a wheel rake.

You'll have the fastest drying/fluffiest windrow with a property set and ran rotary.

Each sweep of teeth on a rotary stays in contact with that hay that's being gather until it's deposited in a windrow. A bar rake and wheel rake keeps handing off the hay to next teeth/wheel while adding more hay to the windrow until it finally exits the rake.

I've never seen a person go back to a wheel/bar rake (like never seen someone go back to a sickle bar mower after using a discbine).

YMMV
