I just don't have the temp of steaks memorized..
Then maybe refrain from pushing your perceived $cience .
Straight off USDA's website: "Cook raw beef, pork, lamb and veal steaks, chops and roasts to a minimum internal temperature of 145 F as measured with a food thermometer before removing from the heat source". They wouldn't be happy about a medium rare steak.
Thank goodness your word isn't gospel.
