NW Washington | What you are seeing is the polymerization of the cooking oil, which is mainly due to heat. Once the oil polymerizes, it is almost impossible to remove. This did not happen with the olive oil, but I have sheet pans with polymerized oil on them, and I use olive oil most of the time when cooking or baking. The polymerized oil looks like crap, but it does not hurt anything.
This link discusses this subject, and Google will provide more information. I have also seen this happen on diesel engines when using vegetable oil for fuel.
