I'm reading a very interesting book right now about this topic entitled, "Ultra-Processed PEOPLE The science behind food that isn't food". The author is Dr. Chris Van Tulleken. Copyright 2023. According to him and his research, if the sunflower seeds weren't "processed" then they would be a food product. You can create sunflower oil from sunflower seeds, however the process used today is called RBD- (Refine, Bleach and Deodorize). He claims that 90 % of oils we use today (soybean, palm, canola and sunflower) are processed this way and that the processing is the problem. It's an interesting read- have not finished it yet, but definitely "food for thought".
