| Either do 1-2 cuttings, terminate, and do another cover like radishes with roots that go vertical. Or let it go to seed, and harvest it so you have seed for cover cropping other fields later. But it depends a lot more on what work you want to do and what your farm has equipment for, as well as the business side like the market for clover hay, and what you paid for seed, etc. | |
