Second wire close enough to the first wire they can't get their head cleanly through between but high enough they can't easily clear it. I don't think coons really think about jumping over but if you're concerned it may well be worth a third wire equally spaced. I'd add, make sure you've got a "hot" fencer, I think it should throw at least a 1/16th to 1/8th inch spark.
