I have grown proso, brown top and Japanese. I would say brown top will probably get the tallest and a lot of people bale it. I can't answer the protein questions sorry. Proso will put on a head at 6-12 inches if you have dry land conditions so it might not be a good choice. Brown top seems to grow pretty well and requires less rain
