Pittsburg, Kansas | Lower saturated fat. Yes coconut oil is very high in saturated fat. Saturated fat was made out to be the boogie man but turns out it is not.
The Soybean Association was a main source of demonizing coconut oil. Good for our soybean market, not so good for health.
But phytocholesterol is a whole nuther rabbit hole to go down. Too deep of hole for this thread.
I don't think all has been learned that there is to be learned on the subject yet. Some information is still hypothesis with some supporting evidence.
