.
Dairy is alive and well on the eastern side of the state. Sargento Cheese has a large plant in the Plymouth. On the western side counties nearest the Twin Cities metro area have seen most small dairy operations close down. But we have some good sized cheese plants as well; Eau Galle makes parmesan, Ellsworth is known world wide for their cheese curds, and AMPI has a large cheese plant in the small town of Jim Falls. And going across state there are still several smaller, but thriving cheese factories as well. The EPA and government regulations are a thorn in the side of the plants though. Ellsworth was recently fined for allowing some waste water into the nearby creek, and when we shipped to AMPI and were active on the local board, saw a lot of headaches over wastewater issues at Jim Falls as well. I think there is actually a resurgence of cheese factories, with smaller on farm artisan cheese becoming more popular. I'll have to take pictures of some of the area cheese factories for a future posting.
