Never had to to tender but I think given the choice I would want to be facing traffic, with the ditch or approach on the drivers side. Facing the traffic in theory should let you get farther off the shoulder or closer to an approach because you have a better view out the drivers side window. Also it lets you exit the truck and safely work along the side of the trailer without having to walk around the unit.. When I drove truck hauling for a local processor, when things got really muddy we loaded on the road and it was always nicer to park facing traffic then the carts etc could travel down the passenger side while loading, same basic idea in terms of driver safety .
