If the pulley is solid and straight, I bet it works fine just putting the v belt right on the flat pulley, as long as the speed is close. If that doesn't work, or the speed isn't close enough, I'd think a multi v belt on the flat pulley to a jack shaft would be next easiest. Then the trouble is finding a multi v pulley for the jack shaft.
I can't think of an off the shelf way to mount a pulley to the flat pulley or hub.
