Your marbling looks excellent! I can’t really comment on size because our butcher cuts them differently. The trimming looks excessive to me. With it being deer season the trimming may have gotten mixed into some venison burger. That’s what the big packers do, get really fat US beef and mix the trimmings into the cheap imported stuff.
