I hear your point, but the first bin I built was a 60k bu grain bin that I could half fill. I got teased a lot about it. Now there are 2 bins and a leg, both bins full. I tend to error on the overbuilding side with the expectation I will grow into it.
If I build the cold storage now I will continue without a shop for a number of years as I have other things my capital needs to address.
80X100 leaves room for metal working, and a couple large projects torn apart at once say working on 40ft planter and 40ft drill, plus the ability to park a few machines in there that I want to keep warm and ready to start. That’s my logic anyways.
80x100 leaves a lot of room to take stuff apart and never put it back together....
I fixed that for you. We work in a shop every single day of the year, I built it bigger so I could get more techs, but in the times we are short one or two, like now, stuff gets torn apart that's ours, and it's MONTHS before we get back to it. Customer stuff comes first...if we had less room, we'd have to put ours back together at some point to have room for more customer work.
Sit down, make a plan for the future, and try to make the best educated guess you can on what to do now. Buildings rarely get cheaper, so I would build it big enough now, but I wouldn't build an 80x100 for a farm shop if it was me. Too much space for clutter.
