There’s the problem, you’re trying to make it “editable”.  

I prefer to make mine taste good.  Most people cook all of the flavor out of pork because they’re scared to death of undercooked pork.    Over cooked meat is tasteless shoe leather, doesn’t matter if it’s pork or beef. 

Whole pork loin on a smoker is some of the best and cheapest eating you can do.  



 



+1 on pork loins.... I do think packers are wanting pigs too heavy and some genetics top out at a lighter weight both growth and taste wise

Friend in abbatoir says overall swine they butcher is pretty constituent where as beef goes from poorly finished to terrible to great. And some of that is probably because somebody who never fed cattle decides to buy a calf and raise there own meat and don't know how to finish them
