East Central Missouri | Chart say 63 days at 16% @ 75* F. Suppose to divide days by 2 for a safety factor, as days in chart are for a degradation of a full grade, ex. grade 2 to grade 3. The chart is not linear as far as temperature, as Temps go up each 5* the amount of days gets smaller. Take it down to 70*, add 22 days, 65* add 28 days. I don't know your temps in Alabama. So 31 days at 16%, 75*. Adjust accordingly.
As to moisture, if your sample is first thing in the morning, I'd expect little change in moisture. If your sample is late in the day, I would expect moisture gain the first night as the moisture equalizes in the corn kernal.
If I was up north, I would not hesitate to hold some loads on some trailers for an extended time, because it most likely would be the tail end of harvest with considerable cooler temperatures. September corn in Alabama, I would be more concerned. October 2nd delivery vs. October 30 would make a difference also.
