Going to depend a bit on how tight the bale is and if it's wrapped or not, but hay isn't so much a linear graph as it is a cliff. Get a bit too wet and instead of spoiling it will catch fire. I guess your question would be "how long until it catches fire"? I don't have a good answer for that.

But as long as you are under the fire threshold the hay can dry and cure even if a bit wetter. Especially if it's small squares and you put salt between layers.

Wet wrapped hay "here" goes south pretty quick once it gets over a year old. Dry hay stored inside can last "many years" but will loose nutritional value over time. I know I've fed a bit of hay over 10 years old to some heifers and they ate it.
