Most of the continuous fence panels I use are made to slide together, smaller diameter pipes welded inside on one end. Too heavy to handle I use pallet forks on the loader to raise them to the desired height then use a come along to pull the panels together. Usually takes a hammer to tap the pipes as you are pulling them together to help them line up. I keep a level handy on fairy even ground.

The best tool I've ever used to cut them is a portable band saw. A lot of the fence goes on oak railroad ties and come with a bracket that takes two 1/4 lag screws. In oak ties you have to drill a pilot hole or you will snap the lag screws with an impact wrench. I've put up a lot of it by myself but there was a bit if a learning curve and goes up pretty quickly on the posts are set. As far as height, I make them as high as I hang my gates, otherwise your gates end up looking like the the best place to try and go over for those so inclined.
