SW OH | I've been doing something similar since covid started. My calves are mostly born on pasture. When weaned they go into a barn with concrete floor and have some outside concrete. Hay, water, and a teaser of ground corn until 7-800 pounds. Then they go to a pen on concrete and no outdoor space. There they are started slowly on grain mix of 70% shelled corn, 15% alfalfa hay, 13% whole soybeans, and 2% TM salt. All ground and mixed in a grinder mixer. All home grown except the salt. After a month or so the grain mix is all they get to eat. All indoor barn space is bedded with corn stalks and they do eat a few of those.
Mine finish out well around 1,300 pounds and taste great. Marketing is my downfall. It was easier during the covid scare.
My cows are on pasture from mid April till it starts to get muddy, around November or so. Then they go in the barn with twice as much outdoor space, all concrete.
