What is different about a Jersey cow's milk?


Jersey milk has a higher solids content(protein, fat, and sugar) than Holstein milk does.

Beyond that though, most of the Jersey population has a gene for the production of a2a2 protein in the milk. Holsteins mostly have a1a2 protein instead. The a1a2 protein seems to be harder for some people to digest.
