I generally cut it off raw. There are specialized corn cutters that do help. I work outside, so it's a "hose the mess away" operation.

stick the raw corn in zip loc freezer bags--a pinch of salt if you like. Freeze. I put a layer or two of bags on a half-sheet pan and place that in the deep-freeze. You want to get it frozen fairly quickly so there's less chance of spoiling. A big thick pile freezes slowly.

When using, I pull the bag out, drop it in a microwave bowl and heat till the temp is right. That gets it cooked and ready to serve.

No, it doesn't taste bad, but it's not all buttery and sweet like the traditional recipes. That's ok, I don't need the extra calories!
