New Mexico | Nieghbor here has 2,500 head of em. Spends more money on cake than any cow outfit I know of here.
Seems like the best way to harvest em is to field dress em.
Perhaps th Best way to utilize rough ground up in your neck of the woods is go with Scottish Highlander cross and or Galloway cross cows and breed those to good big beef bullls ( any other breed....Angus works well ).
The afore type cows handle country actually better than bison do, and there's more of a REAL market for cattle.
