Depends.  Corn stalks tend to be a bit higher in protein.  Wheat straw tends to score a higher feed value.

I asked about straw feed value differences between wheat varieties at a station field day.  The researcher said there was significant differences between varieties; he referred me to a guy who did work in this area, but I didn't follow up.
