It wouldn't be good practice if you could. The idea behind a pinch nut is that the normal threads hold the load and the restrictive threads slightly deform to prevent loosening. Putting one on backwards will deform the threads along the entire length of the engaged bolt. If you need a low profile nut try a "punch" nut. It will have three indentations on the flats of the nut.

It can be done. I've done it in very specific, uncommon circumstances. I don't remember the details, but there was a good reason for it that time. Absent a good reason for it, I would not do it. It helps to run a new nut on once to loosen the threads, then take it off and turn it over.
