I butterflied half of the loin, flattened it with a hammer, added a pound of chorizo Mexican sausage, dry rubbed it, and tied it up with butcher's string. The other half I rolled in olive oil, rosemary, and salt/pepper. I was at a farm sale and bought a little unused Brinkmann smoker for $2.00 recently. It worked great. I would have a picture of the finished sliced product, but this pack o' hounds I call family ate it all!
