Texas | My mom found this recipe and made it for 4th of July. In addition to being easy to make, I found it to be aesthetically pleasing, delicious, and nutritious.
8 oz. white button mushrooms
1 zucchini
1 yellow squash
1 red bell pepper
1 yellow bell pepper
1 red onion
1 broccoli crown
2 Tbsp. oil
1 tsp. salt
1/2 tsp. garlic powder
1/2 tsp. paprika
Cut vegetables to desired size and place in a large mixing bowl. Add oil, salt, garlic powder, and paprika. Stir until thoroughly mixed. Preheat oven to 375F. Spread mixture evenly on large rimmed baking sheet. Bake for 15 minutes. Remove from oven and stir. Bake for an additional 7 minutes. Vegetables should be tender.
