| Everyone in our family has their favorites for various tasks. Just recently I bought Mauviel copper which has a stainless lining and seems to work very well. It's extremely durable and as practical as copper pans get. Cast iron has its place. It's slow to heat and cool, not especially responsive but wonderfully steady when you get it heated up or cooled down.
