central Ia | New using a smoker, tried the 3-2-1 recipe for smoking, 3 hours at 270 uncovered, 2 hours wrapped with a stick of butter. 1/2 cup of brown sugar and 1/4 cup of honey at 225, then uncovered at 225 for an hour, they said 205 internal temp but only got to 170, they were good and moist but not falling off the bone. What do I need to do to get them falling off the bone? Treager pro 780 smoker
