| Following the directions to a "T". Start with 1/2" headspace canning peaches. After the process time (10 minutes at 10 lbs) I remove the jars to find that almost 1/3 of the liquid is gone. Doesn't seem to be a problem with my tomato based stuff, but my peas and definitely my peaches are losing a lot of liquid while canning. I've got the lids good and darn tight, they are properly sealed when done, just can't figure out why the syrup is leaving the jar. If I could find more peaches, I'll try doing them in a water bath, but I can't imagine the pressure cooker makes that much difference.
