East Central Arkansas | Not getting into the health concerns of some but using lard vs some of the different vegetable oils. I have fried a bunch of fish in my day but mostly used one of the vegetable oils. Lately it''s normally canola oil but have used everything from the cheapest soy oil to peanut oil. That was our favorite when we had the store using the deep fryers with the cool zone for the settlings and filtering the oil but it''s expensive. Had some lard on hand I had bough for another use so using it today. I don't know if it's the lard taste or just the fish but it don't seem to taste as good as usual. The fish isn't bad but was on ice longer than I like before dressing. It"s still good though.
