If you're not set up for doing corn, then strike that off the list. I know that many folks do it here (SE PA), and it works well, even do it after a 1st cut works well on a short season corn....

But since your goal is to get back to alfalfa, I'm thinking some sort of rotation with beans/wheat would be best. I think it would be in your interest to have 2 crops before re-planting the alfalfa, and Martin's suggestion sounds like a good one. We've got some fields here that have had only one crop between alfalfa stands, and they are OK, not real great, just OK.

I have done winter wheat into alfalfa, and I think it works well.
