Yes in a salt brine and fermenting like kruat. The tannins in the leaves help make stuff crisp. Can use grape or oak leaves. Search lactose fermentation. One of the posters on here got us started and interested with preserving like this. Have been eating the pickles on my noon sandwich since last Fall when we made our first patch. Somedays also have the kruat.
