I worked as a jackaroo in Australia in the outback we would shoot kangaroos. When it would rain, the roos would move in mobs across the outback eating the new grass. Imagine 1000 whitetail deer moving across your farm in groups. Station owners hated them as it was their feed for sheep and cattle. Could also be hard on fences.

There were professional roo shooters that had refrigerated semis that would follow the mobs and harvest the meat and hides. They were interesting guys. Would shoot, skin, and dress in the field.

As 18-20 year old jackaroos it was really fun to run across the professionals. Our cowboy motorcycle crew was less professional. We would take whatever tray back Toyota land cruiser with a spotlight on the roof the station had, a case of West End Draught(cheap) beer, a couple .22 rifles and shoot roos at night. Some guys would pay us a buck or two for their feet as proof of kill. If we wanted food we would partially skin and cut the legs off, really the only part worth saving, and throw the whole leg on a fire to cook by our swags. Common red kangaroos are much smaller then most people imagine, 50-75 lbs, and really don't have much meat except the legs. They are also a bit gross as many of them have worms. I remember cutting into their stomachs and just a mass of grass and worms. It was a delicacy if you were at the same station for a few days to bait a yabbie (crawfish) trap with kangaroo meat and have a yabbie boil. Most stations had livestock dams for the storage of water.

Meat was great after beer, cooked on a open fire, and only eating Weetabix dry cereal as your food for a few days... In a normal situation it is gamey like venison. Beef is much better except the novelty.
