We cut about 4" off each knife ---coulter leaves a trench N runs mostly in the trench
Then get the knife tip close as possible to the coulter

Worked for us for years

Pics of some stuff we had left—(we sold our 2800) sometimes need to slot the knife bolt holes so it will adjust up right
Knife in my pic needs adjusted tip in

IMO knife full length--- stalks will get in when it first hits the ground (your knife hit's first)
When we hard coated up our even cut off knives we usually left a blob of HC sticking out forward on the tip
