I have done what you desire but it is with Steer Command rather than OnTrac but I believe the situation would be the same.
In my situation, I use a push button on my combine Command Arm to engage/disengage my Steady Steer while harvesting soybeans. I use a TrueSight II feeler system to steer the combine in corn. The TrueSight wiring harness used a different style of connector for their remote engage disengage switch. It also uses the two wire momentary contact method to signal the steering controller of my intentions.
I wanted to use the same switch for whichever system I was using so I made an adapter to adapt the Truesight II connector to be the same as the Steady Steer connector. That way when I switch between crops, I just unplug my switch from one system and plug it into the other. could have cut off the Truesight II engage connector and replaced it with the Steady Steer style.
As far as a switch goes, it just needs to be a momentary type. I purchased one of those foot switches from Harbor Freight that can be used to run a drill press with your foot. The original foot switch wiring plugged into a 110VAC outlet and the drill plugged into a receptacle on the foot switch. You locked the normal drill switch in the ON position. Then the foot switch could control the drill. You needed to keep your foot on the switch for the drill to continue to run with this style.
I cut the 110 VAC plug off the cord and replaced it with a connector that would mate with my Steering harness. I used the black and white wires and snipped off the green wire. I opened up the switch box. Since the black wire was already connected to the switch, it was fine. I moved the white wire from the receptacle to the other side of the switch. I cut off the stub wires that remained on the receptacle. I just left the receptacle in the switch box to keep the hole filled. This meant when I stepped on the foot switch, the internal switch connected the black and white wires until I removed my foot.
Since you already have both a two wire and a three wire switch I would think either would be fine. With the foot switch that has three wires you will only use two of the three. One is likely Common, another Normally Open and the other Normally Closed. The Common will make contact with the Normally Closed wire but will break contact with it and make contact with the Normally Open wire when you step on it.
You will want to use the Common and Normally Open wires. These can be determined by using a meter set to continuity or Trial & Error. Find a pair that makes contact when you step on the switch. Use those two wires. They can be connected in either order.
My Harbor Freight modified foot switch worked fine but I decided that I prefer to use a finger button switch rather than feel around the floor with my foot. I decided to go with the finger switch shown below.

This one below looks similar but maintains the power. This style would NOT be suitable for a Steering Engage Switch. This style could be used for a remote spray boom foot switch since you would push it once to complete the circuit to start spraying. When you remove your foot it stays engaged. You would step on the switch again and release it to stop spraying. The difference between the two choices is the type of switch that is used in the foot switch box.. Depending on the situation, one or the other would be appropriate.

Here's a picture of the button switch that I use in my combine. I have both the Steady Steer and Truesght II steering controllers set so that a button push can be used to engage and disengage steering. Grabbing the wheel and turning it does disengage but I find that I prefer to reach over and push the button to disengage as I approach the Headland rather than turning the steering wheel
