They're not saving on their taxes, they're just delaying paying taxes with the hopes of generating an even larger tax bill in the future.
Unless the cow dies or is sold as a cull prior to generating enough income to offset her cost, then they'll save on taxes but I don't think that is the desired outcome.
The $5000 cow costs $5000 regardless of what tax bracket you are in and is most definitely not a "no brainer" decision. It may end up being a good decision but it is definitely not a decision that can't miss.
