The first dose primes the immune system and a booster will kick your antibody response 10 fold. Generally speaking that's basic recommendations across the board with animals and humans. Sure, there are a few exceptions where a vaccine may use a special adjuvant help stimulate immunity. You can get by with one dose. Depending on the challenge, it may overcome your protection from one dose where two doses would provide protection. Yes, these vaccines need to protect you from rota and corona viruses plus E.coli and clostridium. The label on the vaccine should list diseases it addresses.
