The same things that can go wrong with any feed. Potato waste, distillers, brewers grain, soybean meal, bakery waste, scrap candy, molasses, grain screenings, and lots of other feeds are byproducts. Feed too much of any of them and you can have problems. Use them correctly and they can supply nutrients at a cost savings. The rumen bacteria don't care where their nutrients come from and the carbohydrates and proteins that they assemble are not distinguishable from the ones made from inputs approved by your sensibilities. One of the benefits of livestock is the potential to make good food from inputs not readily consumed by humans.
