My brother sorting pens are 16' wide x 60' with a 16' alley on each end. they have a 16' gate on each end. With a 16' pen you can sort cattle pretty easy. They don't feel as threatened. The one end feeds into his tub alley and the main holding pen. The other end opens to the main holding pen and a 40'x100' pen on the other side. This pen dumps back into the bunk alley. We have eight different pens of varying size that we can put cattle into. We weaned this weekend. He had 170 pairs at his place. We sorted them off and then sorted the cows to haul to stocks and then sorted the steers and heifers. Just the two of us.

I have 20' wide pens like in your picture with 12' gates. The problem is that they will want to circle back on you when you try to get them out of the pen. 10' is a little tight of an alley if I am going to ben in it with the cattle. Think how many sorts you might have at one time and build with that in mind.

I built my original pens thinking 60 cows is all I would have. Typically winter 150 cows at my place. In the process of redoing my pens now.
