Pecan is a hickory, so not terribly rot resistant. Are these food grade grafted cultivars? or seedlings for a shade tree that you want to last a century? I'd leave them alone if they're for food, if they develop a hollow trunk, it won't affect the value of the tree, and you wouldn't want to risk cutting off the scion and have the rootstock grow back. You could coppice it by cutting it low when dormant, and it should sprout back nearly as big, but it would be the rootstock variety, and maybe not gain much as far as a durable tree.
